Mandarin Orange Cake recipes are refreshing anytime!
This 3-layer (or 1 layer) Mandarin Orange Cake recipe is an easier scaled down version my aunt recently shared with me.
It has been adapted and changed.
She makes it all the time and it is fantastic!
I’ve tried a few other recipes and just haven’t found one I like better than this.
The pineapple and mandarin orange give this cake an amazing flavor!
It’s yummy, it’s refreshing, it’s cool, it’s creamy, it’s moist and best of all, it’s easy to have on hand because it stores in the fridge!
Mandarin Orange Cake Ingredients:
The ingredients are easy, too.
A box of butter yellow cake mix, a can of mandarin oranges, 3 eggs, 1 stick of butter, and 1 tsp of orange
extract are all you need to make this delightfully fluffy and moist cake.
The icing is just as easy!
A large container of Cool Whip, a can of pineapple, and a large box of an instant vanilla pudding will provide you with a refreshing and light icing.

Mandarin Orange Cake Directions:
This recipe is quick and easy to put together!
Mix all of the cake ingredients together and bake in a 9 x 13 cake pan for approximately 20 minutes at 350.
Remember this is a 1-layer cake version!
After the cake has baked, allow cooling.
While the cake is cooling, mix all icing ingredients well.
Spread the icing equally over each layer. Refrigerate.
Get ready for a scrumptious experience!

- 1 box butter yellow cake mix of choice.
- 1 can mandarin oranges (do not drain).
- 3 eggs.
- 1 stick of melted margarine or butter.
- 1 teaspoon of orange extract.
- 1 large container of Cool Whip.
- 1 can of pineapple (do not drain).
- 1 large box of instant vanilla pudding.
- Mix all cake ingredients together.
- Lightly grease and flour 3 (9 inch) or (1 9x13 in) cake pans.
- Divide batter evenly into the 3 cake pans.
- Bake at 350 for approximately 20 minutes.
- Let cool thoroughly.
- Mix all icing ingredients together.
- Refrigerate for approximately 30 minutes.
- Spread icing over each cake layer.
- Note: After frosting, refrigerate cake until ready to serve.
- Do not drain the mandarin oranges or the pineapple.
