Banana Bread is a tasty, classic dessert or snack, which I love. I have a confession, though: I’ve never made it, until today.
Awhile back, I bought the Magnolia Table cookbook, from Joanna Gaines. (If you missed my review, click here to read it.)
It’s beautiful! I love the photography and the collections of recipes spanning breakfast, lunch, soups and salads, appetizers and starters, side dishes, dinner, and desserts.
My Banana Bread Experience
The prep was really easy, but I have to tell you that I usually don’t follow a recipe the way it’s written. I’m a rebel like that.
Jo’s Banana Bread recipe requires 8 tablespoons, or a full stick, of butter. I used half butter and half vegetable oil. It’s not that I don’t like butter or didn’t have the full amount. I thought it would be just as tasty, but maybe a bit healthier.

I also omitted serving it with a pat of butter.
I used a baking mix rather than putting in individual ingredients that were part of the recipe. Why? It was easier than measuring individual ingredients, which were part of the baking mix, anyway.
The resulting Banana Bread was fabulous!
Rather than baking it in a loaf pan, it’s baked instead in a square pan, so it’s more like a Banana Cake.
It’s moist, tasty, and benefits from having the bananas baked into the batter chunky-style, as Jo recommends, rather than more thoroughly beaten.
The texture is richer that way.
Will I make this Banana Bread recipe again?
